07 - 4 large eggs

11 - 1 teaspoon dried oregano

# Steps:

01 - Cut sweet potato into uniform cubes to ensure even cooking.
02 - Heat olive oil in a large skillet over high heat. Add sweet potato and all seasoning ingredients. Reduce heat to medium, stir to coat, and cover with a lid.
03 - Cook for 10 to 15 minutes, stirring occasionally, until sweet potatoes are tender when pierced with a fork.
04 - Mix in diced bell pepper, red onion, and minced garlic. Fold in the chopped spinach. Cover and cook for an additional 3 minutes.
05 - Create four wells in the vegetable mixture. Drizzle a little oil into each well and crack one egg into each space. Cover and cook for 10 to 15 minutes, adjusting time based on your preferred firmness of the eggs.
