Soak chia seeds in 60 ml coconut water and refrigerate for 10 minutes to allow them to swell.

Blend strawberries until smooth and transfer to a separate vessel.

Add the remaining coconut water, honey or maple syrup, and lemon juice to the strawberry purée. Blend until fully combined.

Distribute hydrated chia seeds among serving glasses. Add ice cubes and extra strawberry slices if desired.
