Spinach Cottage Cheese Flagels (Print Version)

# Ingredients:

01 - 1 cup cottage cheese
02 - 1 cup + 2 tablespoons all-purpose flour
03 - 3 teaspoons baking powder
04 - 1/2 teaspoon salt
05 - 1 tablespoon olive oil
06 - 2 ounces baby spinach, finely chopped
07 - 1/2 cup shredded mozzarella cheese

→ Egg Wash

08 - 1 egg, lightly beaten

# Instructions:

01 - Preheat oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper.
02 - In a mini food processor, pulse cottage cheese until smooth and creamy.
03 - In a large bowl, combine processed cottage cheese, flour, baking powder, salt, olive oil, chopped spinach, and mozzarella. Mix thoroughly until all ingredients are well incorporated.
04 - With clean hands, form the dough into a thick log approximately 6 inches long. Divide into 6 equal pieces. Shape each piece into a flattened circle and create a hole in the center with your finger to form the traditional bagel shape.
05 - Place shaped flagels on the prepared baking sheet. Brush tops with beaten egg wash. Bake for 22-25 minutes until golden brown. Transfer to a wire rack to cool completely.

# Notes:

01 - These flagels (flat bagels) are higher in protein than traditional bagels thanks to the cottage cheese and require no proofing or boiling.
