In a mini food processor, pulse cottage cheese until smooth and creamy.

In a large bowl, combine processed cottage cheese, flour, baking powder, salt, olive oil, chopped spinach, and mozzarella. Mix thoroughly until all ingredients are well incorporated.

With clean hands, form the dough into a thick log approximately 6 inches long. Divide into 6 equal pieces. Shape each piece into a flattened circle and create a hole in the center with your finger to form the traditional bagel shape.

Place shaped flagels on the prepared baking sheet. Brush tops with beaten egg wash. Bake for 22-25 minutes until golden brown. Transfer to a wire rack to cool completely.
