Preheat the oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper.

Place the cottage cheese in a mini food processor and pulse until smooth and creamy.

In a large bowl, combine the processed cottage cheese, all-purpose flour, baking powder, salt, olive oil, chopped baby spinach, and shredded mozzarella cheese. Mix thoroughly until all ingredients are well incorporated.

With clean hands, form the dough into a thick log about 6 inches long. Divide into 6 equal pieces. Shape each piece into a flattened circle and create a hole in the center of each with your finger.

Place the shaped flagels onto the prepared baking sheet. Brush the tops with beaten egg.

Bake for 22 to 25 minutes until golden brown. Transfer the flagels to a wire rack to cool completely.
