Homemade Spinach Cheese Flagels (Print Version)

Chewy golden flagels filled with spinach and cheese, baked for a savory bite any time of day.

# Ingredients:

→ Flagel Dough

01 - 1 cup cottage cheese
02 - 1 cup plus 2 tablespoons all-purpose flour
03 - 3 teaspoons baking powder
04 - 1/2 teaspoon salt
05 - 1 tablespoon olive oil
06 - 2 ounces baby spinach, finely chopped
07 - 1/2 cup shredded mozzarella cheese

→ Egg Wash

08 - 1 egg, lightly beaten

# Steps:

01 - Preheat the oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper.
02 - Place the cottage cheese in a mini food processor and pulse until smooth and creamy.
03 - In a large bowl, combine the processed cottage cheese, all-purpose flour, baking powder, salt, olive oil, chopped baby spinach, and shredded mozzarella cheese. Mix thoroughly until all ingredients are well incorporated.
04 - With clean hands, form the dough into a thick log about 6 inches long. Divide into 6 equal pieces. Shape each piece into a flattened circle and create a hole in the center of each with your finger.
05 - Place the shaped flagels onto the prepared baking sheet. Brush the tops with beaten egg.
06 - Bake for 22 to 25 minutes until golden brown. Transfer the flagels to a wire rack to cool completely.

# Notes:

01 - Flagels are a flatter version of bagels, resulting in a crisp exterior and more even baking.
02 - For best results, ensure the cottage cheese is well blended to prevent lumps in the dough.
