Spicy Chili Garlic Deviled Eggs (Print Version)

# Ingredients:

01 - 12 large eggs
02 - 80 millilitres mayonnaise
03 - 22 millilitres chili garlic sauce, adjust to taste

04 - Smoked paprika, for garnish
05 - Crispy fried onions, for topping

# Instructions:

01 - Place eggs in a pot and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes. Transfer immediately to an ice bath until cooled, then peel carefully.
02 - Slice eggs lengthwise and gently remove yolks to a bowl, reserving whites intact.
03 - Mash egg yolks thoroughly with mayonnaise and chili garlic sauce until smooth and creamy. Adjust chili garlic sauce to desired spice level.
04 - Pipe or spoon the yolk mixture into the egg white halves, filling them generously.
05 - Sprinkle filled eggs with smoked paprika and top each with crispy fried onions. Serve immediately or refrigerate until ready to serve.

# Notes:

01 - Cooling eggs rapidly in ice water prevents overcooking and makes peeling easier.
02 - Adjust chili garlic sauce for more or less heat according to preference.
