In a bowl, mix the chopped shrimp, lump crab meat, and shredded cheddar cheese until well combined.

Place a generous scoop of the seafood-cheese mixture onto the center of each flattened biscuit. Fold up the edges to enclose the filling, pinching to seal completely.

Position the filled biscuits seam-side down on the prepared baking sheet. Top with jalapeño slices or chopped green onions as desired.
