Red Velvet Brownies with Frosting (Print Version)

# Ingredients:

→ Red Velvet Brownies Base

01 - ¾ stick (85g) unsalted butter
02 - 1 cup (200g) granulated sugar
03 - ¼ cup (55g) light brown sugar
04 - 3 whole eggs
05 - 1 egg yolk
06 - 1 teaspoon vanilla extract
07 - ⅓ cup (72g) vegetable oil
08 - ¼ cup (25g) cocoa powder
09 - ¾ cup (90g) all-purpose flour
10 - 1 tablespoon white vinegar
11 - 1 tablespoon cornstarch
12 - ¼ teaspoon salt
13 - ½ teaspoon red food coloring gel
14 - ¾ cup white chocolate chips (optional)

→ Cream Cheese Frosting

15 - 4 oz (114g) cream cheese, room temperature
16 - ¾ stick (85g) unsalted butter, room temperature
17 - 4 cups (480g) powdered sugar
18 - 1 teaspoon vanilla extract

# Instructions:

01 - Line a 9-inch square cake pan with parchment paper and preheat the oven to 350°F / 180°C (160°C fan assisted).
02 - Melt the butter in 30-second microwave intervals until completely liquid. In a large mixing bowl, whisk together both sugars and the melted butter until well combined.
03 - Gently mix in the eggs, egg yolk, and vanilla - avoid overmixing as this can make the brownies cakey. Then blend in the vegetable oil and cocoa powder until just combined.
04 - Take a couple tablespoons of batter and mix with the red food coloring in a separate bowl until smooth. Return this mixture to the main batter and combine thoroughly.
05 - Using a rubber spatula or wooden spoon, fold in the flour, cornstarch, and salt until no dry spots remain. Mix in the vinegar well. If desired, fold in white chocolate chips.
06 - Pour the batter into your prepared pan and bake for 20-25 minutes, or until a skewer comes out with just a few moist crumbs. Allow to cool completely before frosting.
07 - Beat room temperature butter and cream cheese until smooth. Gradually mix in powdered sugar, then beat on high speed until light and fluffy. Mix in vanilla extract.
08 - Spread the cream cheese frosting evenly over the cooled brownies before cutting into squares.

01 - For best results, weigh ingredients with a scale - especially flour, as too much can make the brownies cakey instead of fudgy.
