In a large mixing bowl, whisk together pancake mix, whole milk, egg, vanilla extract, melted butter, pure maple syrup, and ground cinnamon until just incorporated. Batter should remain slightly lumpy. Do not overmix.

Spread half the pancake batter evenly in prepared baking dish. Top with cooked sausage and sprinkle shredded cheddar cheese evenly over, if using. Pour remaining pancake batter to cover sausage and cheese fully.
