Set oven to 325°F and line a baking sheet with parchment paper.

Toss baby spinach with olive oil, dried oregano, garlic powder, salt, and black pepper in a large bowl until evenly coated.

Place small mounds of seasoned spinach onto the prepared tray and gently flatten each into a thin disk. Distribute crumbled feta cheese generously over each mound. If desired, sprinkle with red chili flakes or lemon zest.

Bake in the preheated oven for 12 to 15 minutes, or until spinach is crisped and feta begins to brown. Watch closely during the final minutes to prevent overbaking.

Allow chips to cool on the tray for 5 to 10 minutes. Chips will become firmer as they cool.
