Mashed Cauliflower Roasted Garlic (Print Version)

# Ingredients:

01 - 1 medium head cauliflower (about 2 pounds), chopped
02 - 2 tablespoons unsalted butter, melted
03 - 7 roasted garlic cloves
04 - 1/8 to 1/4 teaspoon Dijon mustard
05 - 1/4 to 1/2 teaspoon sea salt
06 - Freshly ground black pepper, to taste

# Steps:

01 - Bring a large pot of salted water to a boil. Add the chopped cauliflower and cook until tender when pierced with a knife, about 10 minutes.
02 - Drain the cauliflower thoroughly and transfer to a food processor.
03 - Blend the cauliflower with melted butter, roasted garlic cloves, Dijon mustard, sea salt, and black pepper until smooth and creamy.
04 - Taste and adjust seasoning if needed. Transfer to a serving bowl and sprinkle with chives if desired.
