Peel the peaches and cut them into thin slices. Set aside.

Spread ricotta cheese evenly over one side of each slice of bread if using. On half of the slices, layer the sliced peaches and drizzle with honey. On the remaining slices, arrange white cheddar cheese.

Spread a thin layer of butter on the outside of each bread slice.

Preheat a panini press or skillet over medium-low heat. Assemble sandwiches with prepared peaches and cheese sides together, buttered sides facing outward. Place in the panini press or skillet and cook until bread is golden brown and cheese is melted; reduce heat to low if bread browns too quickly.

If using crispy bacon, fresh basil, or balsamic glaze, carefully lift the top slice of bread, add the desired extras on top of the melted cheese, and replace. Serve immediately while warm.
