Trim the top and bottom from the pineapple and remove the outer rind using a sharp knife. Slice the pineapple into 2 cm thick spears or rings. For rings, use a small cutter to remove the core.

In a bowl, whisk together melted butter, dark brown sugar, rum (if using), ground cinnamon, and a pinch of salt until fully incorporated.

Place prepared pineapple in a large zip-top bag. Pour the marinade over the fruit and gently toss until evenly coated. Refrigerate for 20-30 minutes to allow flavors to infuse.

Heat grill or grill pan to medium-high (190–200°C). Ensure grill grates are clean and well-oiled to prevent sticking.

Arrange marinated pineapple on the grill. Cook for 4–6 minutes on each side, turning once, and brush with excess marinade during grilling until caramelized and golden.
