Get your oven nice and hot at 200°C (400°F)

In a large bowl, combine your potato and pepper cubes with salt, 2 tablespoons of olive oil, and a squeeze of lemon juice from 1/4 lemon

Grease a large baking sheet with the remaining tablespoon of olive oil and spread out your seasoned potatoes and peppers in a single layer

Pop the tray in the middle of your preheated oven and let everything roast for 25 minutes

Take the tray out, sprinkle your spice mixture evenly over everything, and give it all a good stir to coat everything nicely

Back into the oven for 10-15 minutes until your potatoes are golden and crispy on the outside but tender in the middle

Finish your dish with a fresh squeeze of lemon juice, crumble the feta over the top, and sprinkle with fresh parsley
