Greek Potatoes With Peppers & Feta (Print Version)

# Ingredients:

→ Base ingredients

01 - 1 kg potatoes, peeled and cut into small cubes
02 - 1 red bell pepper, cut into cubes
03 - 3 tablespoons olive oil
04 - 1 teaspoon salt
05 - Juice of 1/4 lemon

→ Homemade spice blend

06 - 1 teaspoon garlic powder
07 - 1 teaspoon onion powder
08 - 1 teaspoon paprika
09 - 1 teaspoon oregano
10 - 1/4 teaspoon cinnamon
11 - 1/2 teaspoon ground pepper

→ For finishing

12 - 60 grams feta cheese (smooth or Greek style)
13 - 2 tablespoons fresh chopped parsley
14 - Juice of 1/4 lemon

# Instructions:

01 - Get your oven nice and hot at 200°C (400°F)
02 - In a large bowl, combine your potato and pepper cubes with salt, 2 tablespoons of olive oil, and a squeeze of lemon juice from 1/4 lemon
03 - Grease a large baking sheet with the remaining tablespoon of olive oil and spread out your seasoned potatoes and peppers in a single layer
04 - Pop the tray in the middle of your preheated oven and let everything roast for 25 minutes
05 - Take the tray out, sprinkle your spice mixture evenly over everything, and give it all a good stir to coat everything nicely
06 - Back into the oven for 10-15 minutes until your potatoes are golden and crispy on the outside but tender in the middle
07 - Finish your dish with a fresh squeeze of lemon juice, crumble the feta over the top, and sprinkle with fresh parsley
