# Ingredients:

→ Base

01 - 4 English muffins, split in half

→ Egg Mixture

02 - 6 large eggs
03 - 1/4 cup whole milk, plus additional splash for scrambled eggs

→ Sausage and Gravy

04 - 1/2 pound breakfast sausage, pork or turkey
05 - 1 tablespoon unsalted butter, optional for gravy
06 - 2 tablespoons all-purpose flour

→ Seasonings

07 - 1/2 teaspoon salt, or to taste
08 - 1/2 teaspoon ground black pepper, or to taste

→ Topping

09 - 8 slices mild cheddar cheese, or preferred cheese

# Steps:

01 - In a large skillet over medium heat, cook breakfast sausage until fully browned and crumbly. Remove sausage with a slotted spoon and set aside, reserving approximately 1/4 cup of drippings in the skillet.
02 - Add flour to sausage drippings in the skillet and cook over medium heat, stirring constantly, until the mixture turns golden, about 5 to 10 minutes. Gradually whisk in 1/4 cup milk and simmer until thickened. Season gravy with salt and black pepper.
03 - While the gravy simmers, lightly toast English muffin halves either in a toaster or under a broiler until just crisp.
04 - In a non-stick skillet, scramble eggs with a splash of milk over medium-low heat, stirring gently, until eggs are softly set.
05 - Preheat oven broiler on high. Arrange toasted English muffin halves on a baking sheet. Top each half with a spoonful of sausage gravy, scrambled eggs, a slice of cheese, and reserved sausage.
06 - Broil assembled muffins until cheese is melted and bubbling, watching closely to prevent burning. Serve immediately while hot.
