02 - 1/4 teaspoon cream of tartar
03 - 1/2 cup low-fat cottage cheese
04 - 1/2 cup fresh or thawed blueberries
05 - 1 teaspoon honey or maple syrup
06 - 1/2 teaspoon vanilla extract

# Steps:

01 - Preheat oven to 300°F (150°C) and line a baking tray with parchment paper.
02 - Separate egg whites into a large mixing bowl. Add cream of tartar and beat with an electric mixer on high speed until stiff peaks form.
03 - Combine low-fat cottage cheese, vanilla extract, and honey or maple syrup in a separate bowl. Blend until completely smooth.
04 - Lightly mash the blueberries with a fork, keeping some texture.
05 - Gently fold the blended cottage cheese mixture into the whipped egg whites, taking care not to deflate the meringue.
06 - Fold the mashed blueberries into the egg white mixture until just combined.
07 - Spoon the batter into even rounds onto the prepared baking tray, spacing apart. Bake for 25 to 30 minutes or until golden brown and set.
