Combine pitted cherries, granulated sugar, and water in a small saucepan. Bring to a gentle boil over medium heat, then reduce to a simmer.

Simmer for 10 minutes, occasionally mashing cherries, until fruit has softened and the liquid thickens slightly.

Remove from heat and stir in vanilla extract thoroughly.

Strain syrup through a fine mesh sieve, discarding solids. Cool syrup completely before use.

Fill a serving glass with ice cubes for rapid chilling.

Pour 30 ml cherry vanilla syrup over the ice. Add espresso or strong brewed coffee and top with milk of your choice.
