# Ingredients:

01 - 2 cups cooked shredded chicken
02 - 1/2 cup buffalo sauce
03 - 1 cup shredded mozzarella cheese

→ Breading

04 - 1 cup all-purpose flour
05 - 2 large eggs
06 - 1 cup panko breadcrumbs

→ For Frying and Serving

07 - 2 cups vegetable oil or canola oil
08 - 1/2 cup assorted dipping sauces

# Steps:

01 - In a large mixing bowl, combine shredded chicken with buffalo sauce and mozzarella cheese. Mix thoroughly until the chicken is evenly coated.
02 - Portion the chicken mixture and form into sticks approximately 3 inches long. Arrange on a tray and freeze for at least 30 minutes to firm.
03 - Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
04 - Coat each frozen stick with flour, then dip in beaten egg, and finally roll in panko breadcrumbs to ensure a complete coating.
05 - Pour vegetable oil into a large frying pan to cover the base. Heat over medium heat until shimmering.
06 - Fry breaded sticks in hot oil in batches for 2 to 4 minutes, turning as needed, until crispy and golden brown.
07 - Remove cooked sticks with a slotted spoon and drain on a plate lined with paper towels. Serve hot with your choice of dipping sauces.

# Notes:

01 - Freezing the formed chicken sticks before breading helps them retain their shape during frying.
