01 - 1 slice sourdough bread
02 - 1/2 ripe avocado
03 - 2 large eggs
04 - 1/4 cup cherry tomatoes, halved
05 - 2 slices red onion

06 - 1 tablespoon chopped fresh parsley
07 - Salt to taste
08 - Black pepper to taste
09 - 1 tablespoon olive oil (optional)

# Steps:

01 - Toast the sourdough bread slice in a toaster or skillet until golden brown.
02 - In a small bowl, mash the ripe avocado with a fork. Season with salt and black pepper to taste.
03 - Crack eggs into a bowl and beat lightly. Pour eggs into a non-stick skillet over medium heat and cook, stirring gently, for 3 to 4 minutes or until softly set.
