Bacon Guacamole Grilled Cheese (Print Version)

01 - 2 tablespoons salted butter, at room temperature
02 - 2 slices sourdough bread
03 - 1/2 cup Colby Jack cheese, shredded
04 - 2 tablespoons guacamole, at room temperature
05 - 4 slices bacon, cooked
06 - 3 to 4 tortilla chips, crushed (optional)

# Instructions:

01 - Preheat a skillet over medium heat.
02 - Spread butter evenly on one side of each slice of bread while the skillet heats.
03 - Place one slice of bread, buttered side down, on a non-stick surface or directly in the skillet. Sprinkle half of the shredded Colby Jack cheese onto the unbuttered side. Spread guacamole evenly, layer on cooked bacon, add tortilla chips if using, and top with the remaining cheese. Place the second slice of bread on top, buttered side facing up.
04 - Transfer the assembled sandwich to the skillet. Cook until the bottom slice is golden brown, about 2 to 4 minutes.
05 - Carefully flip the sandwich using a spatula. Cook until the second side is golden brown and cheese is fully melted, about 2 to 4 minutes longer. Serve immediately.
