Zucchini Drop Biscuits Cheddar (Print Version)

# Ingredients:

→ Biscuit Dough

01 - 1 1/2 cups shredded zucchini
02 - 2 cups all-purpose flour
03 - 2 tablespoons baking powder
04 - 1 teaspoon garlic powder
05 - 1/3 cup cold unsalted butter, cubed
06 - 1 cup whole milk
07 - 1 large egg
08 - 1/3 cup diced green onion
09 - 1 1/2 cups shredded cheddar cheese
10 - Salt, to taste
11 - Black pepper, to taste
12 - Red pepper flakes, to taste

# Steps:

01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - Place shredded zucchini in a kitchen towel and squeeze firmly to remove excess moisture, salting lightly to aid in drainage.
03 - In a large bowl, mix together flour, baking powder, garlic powder, salt, black pepper, and red pepper flakes if desired.
04 - Add cold cubed butter to dry mixture and cut in using a pastry blender or fork until coarse crumbs form.
05 - Stir in the egg, milk, cheddar cheese, drained zucchini, and green onion until dough is just combined.
06 - Drop heaping spoonfuls of dough onto prepared baking sheet, leaving about 2 inches between each portion.
07 - Transfer baking sheet to oven and bake for 20 to 25 minutes, or until biscuits are golden and a toothpick inserted in the center comes out clean.
08 - Remove biscuits to a wire rack and allow to cool slightly before serving warm.
