Place shredded zucchini in a kitchen towel and squeeze firmly to remove excess moisture, salting lightly to aid in drainage.

In a large bowl, mix together flour, baking powder, garlic powder, salt, black pepper, and red pepper flakes if desired.

Add cold cubed butter to dry mixture and cut in using a pastry blender or fork until coarse crumbs form.

Stir in the egg, milk, cheddar cheese, drained zucchini, and green onion until dough is just combined.

Drop heaping spoonfuls of dough onto prepared baking sheet, leaving about 2 inches between each portion.

Transfer baking sheet to oven and bake for 20 to 25 minutes, or until biscuits are golden and a toothpick inserted in the center comes out clean.

Remove biscuits to a wire rack and allow to cool slightly before serving warm.
