Viral Turkish Pasta Recipe (Print Version)

# Ingredients:

→ For the meat

01 - 1 pound lean ground beef (90% lean) - can swap for turkey, chicken or lamb!
02 - ½ medium white onion, finely diced
03 - 1 teaspoon kosher salt
04 - Freshly ground black pepper
05 - 1 teaspoon sweet paprika
06 - 1 teaspoon garlic powder
07 - ½ teaspoon onion powder
08 - ¼ teaspoon mild curry powder

→ For the pasta

09 - 1 pound pasta of choice (shellbows recommended)

→ For the garlic yogurt sauce

10 - 2 cups whole-milk or 2% plain Greek yogurt
11 - 2 garlic cloves, grated
12 - ¼ teaspoon kosher salt, plus more to taste

→ For the paprika butter

13 - 4 tablespoons salted butter
14 - ½ teaspoon sweet paprika

→ For serving

15 - 1 cup cherry tomatoes, halved
16 - Fresh chopped parsley and dill

# Instructions:

01 - Heat up a large skillet over medium-high heat and toss in your ground beef. Break it up with a wooden spoon or meat masher. Sprinkle in the salt, a good amount of black pepper, sweet paprika, garlic powder, onion powder and that pinch of curry powder. Toss in your diced onion and mix everything together. Let it cook until it's beautifully golden brown all over and the fat is absorbed - about 15 minutes. Take it off the heat and cover it to keep warm until serving time.
02 - While your meat is sizzling away, get a big pot of salted water boiling. Cook your pasta until it's just tender but still has a bit of bite to it. Drain it and pop it back in the pot.
03 - Grab a medium bowl and mix together the yogurt, freshly grated garlic and salt until everything's well combined. Give it a taste and add a pinch more salt if needed.
04 - Put a small saucepan over medium heat and melt your butter. Once it's completely melted, gently whisk in the paprika until it's smooth and evenly mixed. Let it bubble away for about 20-30 seconds, then take it off the heat.
05 - Scoop some warm pasta into shallow bowls, dollop on the garlicky yogurt sauce, top with the fragrant beef, and scatter some halved cherry tomatoes on top. Sprinkle with parsley and dill to your heart's content. Finish with a generous drizzle of that gorgeous paprika butter.
