Vietnamese Noodles with Lemongrass Chicken (Print Version)

# Ingredients:

→ Chicken and Marinade

01 - Skinless and boneless chicken thigh fillets (600-800g)
02 - Lemongrass stalk, white part only, bruised and roughly chopped
03 - 2 garlic cloves, minced
04 - 2 tablespoons fresh lime juice
05 - 2 tablespoons fish sauce
06 - 1 tablespoon light soy sauce
07 - 2 tablespoons brown sugar
08 - 1 tablespoon vegetable oil

→ Vietnamese Sauce (Nuoc Cham)

09 - 1/4 cup fish sauce
10 - 4 tablespoons rice vinegar
11 - 2 tablespoons white sugar
12 - 1/2 cup water
13 - 2 garlic cloves, finely chopped
14 - 1 red birds eye chili, finely chopped
15 - 3 tablespoons lime juice

→ Noodles and Fresh Ingredients

16 - 200g dried vermicelli noodles
17 - 2 carrots, julienned
18 - 2 cucumbers, julienned
19 - 5 cups finely sliced iceberg lettuce
20 - 3 cups fresh bean sprouts
21 - Fresh mint leaves
22 - Fresh cilantro
23 - Lime wedges for serving

# Instructions:

01 - Mix all the marinade ingredients with the chicken and let it rest for at least 1 hour, or up to 24 hours for better flavor. Keep refrigerated while marinating.
02 - Combine fish sauce, rice vinegar, white sugar, water, chopped garlic, chili, and lime juice in a bowl. Stir until sugar dissolves. Let the flavors meld for at least 20 minutes before serving.
03 - Heat oil in a pan over medium heat. Remove chicken from marinade, brushing off excess lemongrass. Cook for 6-8 minutes total, until golden brown and cooked through. Let rest for 5 minutes, then slice thinly.
04 - Soak vermicelli noodles in hot water for 3 minutes until tender. Drain and rinse under cold water to prevent sticking.
05 - Either arrange individual bowls with noodles, topped with vegetables, herbs, and sliced chicken, then drizzle generously with Nuoc Cham sauce; or set up all components separately and let everyone build their own bowls.
