06 - 1 1/4 cups carrots, peeled and chopped

10 - 1 1/2 cups green beans, ends trimmed and chopped
11 - 1 1/2 cups frozen corn
12 - 1 cup frozen peas

14 - 8 cups low-sodium beef broth or chicken broth
15 - 2 cans (14 ounces each) diced tomatoes, with juice
16 - 1 1/2 teaspoons dried basil
17 - 1 teaspoon dried oregano
18 - 1/2 teaspoon dried thyme

# Steps:

01 - Heat 1 tablespoon olive oil in a large heavy-bottomed pot over medium-high heat. Pat the beef stew meat dry with paper towels and season all sides with salt and black pepper. Working in two batches, add half of the beef and brown for approximately 4 minutes, turning halfway through to ensure even coloring. Transfer browned meat to a plate and repeat with remaining beef.
02 - Add 1 tablespoon olive oil to the pot. Add chopped onions, carrots, and celery. Sauté over medium heat for 3 minutes, stirring occasionally, until softened. Add the minced garlic and cook for 1 additional minute until fragrant.
03 - Pour in beef or chicken broth and add diced tomatoes with their juices. Return all browned beef, along with any accumulated juices, to the pot. Stir in dried basil, oregano, thyme, salt, and black pepper to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.
04 - Stir in the cubed potatoes, cover, and continue simmering gently for 20 minutes.
05 - Add chopped green beans to the soup. Simmer uncovered for 15 minutes until all vegetables are tender.
06 - Stir in frozen corn and peas. Simmer for an additional 5 minutes.
07 - Remove the pot from heat. Stir in freshly chopped parsley. Taste and adjust seasoning as needed. Ladle hot soup into bowls and serve immediately.
