Avocado, beans, and veggies fill these vibrant wraps for a delicious plant-based lunch or dinner option.

# Ingredients:

→ Filling

01 - 1 (15-ounce) can black beans, rinsed and drained
02 - 1 large ripe avocado
03 - 1/2 cup frozen or canned corn, thawed or drained
04 - 1/4 cup red onion, finely chopped
05 - 1/4 cup fresh cilantro, chopped
06 - 1 tablespoon freshly squeezed lime juice
07 - 1/2 teaspoon ground cumin
08 - 1/4 teaspoon chili powder
09 - Salt and freshly ground black pepper, to taste

→ Assembly

10 - 4 large (10-inch) flour tortillas

# Steps:

01 - In a medium bowl, mash avocado with a fork until mostly smooth, leaving some texture. Add lime juice and combine thoroughly.
02 - Add black beans, corn, red onion, and cilantro to the avocado mixture. Sprinkle with cumin, chili powder, salt, and black pepper.
03 - Gently fold all ingredients together until evenly incorporated, ensuring beans remain intact as much as possible. Taste and adjust seasoning if required.
04 - Heat a dry skillet over medium heat. Warm each tortilla for 15-20 seconds per side, or wrap tortillas in a damp paper towel and microwave for 30-45 seconds until pliable.
05 - Place a prepared tortilla flat on a work surface. Spoon one-quarter of the filling along the center in a log shape, leaving margins at both ends.
06 - Fold the short sides inward over the filling. Roll tortilla tightly from one side, enclosing the filling securely. Repeat with the remaining tortillas and filling.
07 - Serve wraps immediately. Optionally, slice each wrap in half on the diagonal and plate for presentation.

# Notes:

01 - For added flavor, consider adding sliced jalapeños, shredded lettuce, or diced tomato to the filling.
