# Ingredients:

01 - 1 can (5 oz) skipjack or yellowfin tuna, drained
02 - 2 tablespoons Greek yogurt
03 - 1/2 tablespoon Dijon mustard
04 - 1 tablespoon fresh lemon juice
05 - 1/4 cup corn kernels
06 - 1/4 cup diced red onion
07 - 1 tablespoon dill relish or capers
08 - 1/2 teaspoon garlic powder
09 - 1/4 teaspoon black pepper
10 - 1/4 cup shredded mozzarella cheese
11 - 1 burrito-sized wrap (at least 10 inches)
12 - Olive oil for cooking

# Instructions:

01 - In a medium bowl, combine drained tuna with Greek yogurt, Dijon mustard, lemon juice, corn, red onion, relish, garlic powder, and black pepper. Mix thoroughly until well incorporated.
02 - Heat the wrap by covering it with a damp paper towel and microwaving for 10-20 seconds to increase pliability. Place on a clean work surface and layer shredded cheese on the end closest to you, leaving about 2.5 cm of space on the sides and bottom edge. Spread the tuna mixture evenly over the cheese.
03 - Fold the sides of the tortilla toward the middle. Then fold the bottom of the tortilla up and tuck the edges underneath. Roll the tortilla away from you until completely sealed.
04 - Heat a skillet or grill pan over medium heat with a light coating of olive oil. Place the wrap seam-side down and cook for 3-4 minutes, gently pressing occasionally. Flip and cook for another 2-3 minutes until golden and crispy. Reduce heat if cooking too quickly.
