Tortilla Quiche Cottage Cheese Bake (Print Version)

Crispy tortilla crust with savory eggs, cottage cheese, and fresh veggies, baked golden and delicious.

# Ingredients:

01 - 1 large whole wheat tortilla

→ Filling

02 - 3 large eggs
03 - 1/4 cup low-fat cottage cheese
04 - 1/4 teaspoon salt
05 - 1/4 teaspoon garlic powder
06 - 1/8 teaspoon cayenne pepper
07 - Black pepper, to taste
08 - 1/2 cup chopped vegetables of choice (such as baby spinach, peppers, or onions)
09 - 1/3 cup shredded cheese of choice (such as Tex Mex blend or cheddar)

# Steps:

01 - Preheat the oven to 350°F and position a rack in the middle.
02 - Gently press the whole wheat tortilla into an 8-inch cake pan to form a crust shape.
03 - In a blender or mixing bowl, whisk together the eggs, low-fat cottage cheese, salt, garlic powder, cayenne pepper, and black pepper until the mixture is smooth.
04 - Pour the prepared egg mixture into the tortilla-lined pan.
05 - Evenly distribute the chopped vegetables and shredded cheese on top of the egg mixture.
06 - Bake in the preheated oven for 20 to 25 minutes, or until the eggs are set and the tortilla edges are golden brown.
07 - Allow to cool for 5 minutes before removing from the pan. Slice into quarters and serve warm, or refrigerate for later.
