Gently press the whole wheat tortilla into an 8-inch cake pan to form a crust shape.

In a blender or mixing bowl, whisk together the eggs, low-fat cottage cheese, salt, garlic powder, cayenne pepper, and black pepper until the mixture is smooth.

Pour the prepared egg mixture into the tortilla-lined pan.

Evenly distribute the chopped vegetables and shredded cheese on top of the egg mixture.

Bake in the preheated oven for 20 to 25 minutes, or until the eggs are set and the tortilla edges are golden brown.

Allow to cool for 5 minutes before removing from the pan. Slice into quarters and serve warm, or refrigerate for later.
