Tomato Toast with Fresh Herbs (Print Version)

# Ingredients:

→ Spread & Base

01 - 2 cloves garlic confit, mashed into a paste
02 - 1/2 cup good quality mayonnaise
03 - 1 fresh lemon, zested and juiced (you'll need half)
04 - 4 thick slices rustic bread (about 1/2 to 3/4 inch thick)

→ Toppings

05 - 3 medium or 4-5 small heirloom tomatoes, sliced
06 - 2 tablespoons fresh chives, finely chopped
07 - 2 teaspoons sesame seeds
08 - Flaky Maldon sea salt for sprinkling
09 - Fresh ground black pepper to taste
10 - Aleppo pepper for heat
11 - Extra virgin olive oil for finishing

# Instructions:

01 - In a small mixing bowl, combine the mashed garlic confit with mayonnaise and squeeze in the juice from half your lemon. Season the mixture with kosher salt and freshly ground black pepper until it tastes just right.
02 - Take your toasted bread slices and generously spread each one with your prepared garlic-lemon mayo. Layer fresh tomato slices on top, slightly overlapping them for the perfect bite. If your tomatoes are large, feel free to cut them in half first.
03 - Sprinkle each toast with fresh chives, sesame seeds, and a pinch of flaky sea salt. Add some fresh black pepper and Aleppo pepper for heat. Finish by grating some fresh lemon zest over top and drizzling with good quality olive oil.
