Tater Tot Sausage Breakfast Casserole (Print Version)

Eggs, sausage, and tater tots bake with cheddar for a flavorful, crowd-pleasing breakfast casserole.

01 - 450 g breakfast sausage
02 - 900 g frozen potato puffs (tater tots)
03 - 170 g cheddar cheese, shredded
04 - 60 g mozzarella cheese, shredded
05 - 6 large eggs
06 - 120 ml milk
07 - 1 teaspoon garlic powder
08 - 1 teaspoon onion powder
09 - 0.5 teaspoon salt
10 - 0.25 teaspoon black pepper
11 - 0.25 teaspoon crushed red pepper flakes (optional)

12 - 30 g green onions, chopped (optional)

# Instructions:

01 - Heat a large skillet over medium heat. Add breakfast sausage and cook until thoroughly browned and crumbled, breaking it apart as it cooks. Drain excess fat as needed.
02 - Preheat oven to 175°C. Lightly grease a 23x33 cm baking dish. Arrange frozen potato puffs evenly over the base of the dish.
03 - In a large mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, black pepper, and, if using, crushed red pepper flakes, until well combined.
04 - Scatter cooked sausage evenly over the potato puffs. Pour the egg mixture over the layered ingredients. Distribute shredded cheddar and mozzarella cheeses uniformly across the surface.
05 - Place the dish in the preheated oven and bake for 30–40 minutes, until eggs are fully set and cheese is melted and golden. Insert a toothpick into the center; it should come out clean when the dish is properly cooked.
06 - Remove from oven and allow to rest for a few minutes. Garnish with chopped green onions if desired. Serve hot.
