# Ingredients:

01 - 4 cups frozen Tater Tots
02 - 4 large eggs
03 - 1/2 cup shredded cheddar cheese
04 - 2 tablespoons chopped green onions

→ Sausage Gravy

05 - 1/2 pound breakfast sausage
06 - 2 tablespoons all-purpose flour
07 - 1 1/2 cups whole milk
08 - 1/4 teaspoon salt
09 - 1/4 teaspoon black pepper

# Steps:

01 - Preheat the oven according to Tater Tot package directions. Arrange Tater Tots on a baking sheet and bake until crisp and golden brown, about 20 to 25 minutes. Set aside.
02 - Heat a skillet over medium heat. Crumble breakfast sausage into the pan and cook, breaking apart with a spatula, until browned and fully cooked.
03 - Sprinkle flour over the cooked sausage and stir well. Cook for 1 to 2 minutes, stirring constantly, to eliminate any raw flour taste.
04 - Gradually pour in the milk while stirring. Allow the mixture to simmer, stirring frequently, until the gravy thickens—about 5 minutes. Season with salt and black pepper. Remove from heat and keep warm.
05 - In a non-stick skillet over medium heat, scramble eggs until cooked through and fluffy.
06 - Divide hot Tater Tots among serving bowls. Top each with scrambled eggs, pour sausage gravy over the top, and finish with shredded cheddar cheese.
07 - Sprinkle with chopped green onions as desired. Serve immediately while hot.
