Heat olive oil in a large non-stick skillet over medium-high heat. Add chicken, season with salt, pepper, smoked paprika, and garlic powder. Sear until chicken is golden brown and fully cooked. Remove chicken from skillet and set aside.

Pour chicken broth into the skillet and deglaze by scraping up any browned bits from the bottom.

Stir in honey barbecue sauce and soy sauce. Allow mixture to simmer for 2 to 3 minutes.

Add uncooked penne pasta and enough water (about 1 to 1½ cups) to just cover the pasta. Cover and simmer for 12 to 15 minutes, stirring occasionally, until pasta is tender and most of the liquid has been absorbed.

Return cooked chicken to the skillet. Stir well and simmer for an additional 2 to 3 minutes to blend the flavors.

Taste and adjust seasoning if necessary. Scatter chopped parsley, a pinch of crushed red pepper flakes, and shredded cheddar or mozzarella cheese over the top, if desired, before serving.
