Taiwanese Beef Rolls (Print Version)

# Ingredients:

→ Braised Beef Shank

01 - 1.5-2 kg boneless beef shank
02 - 2 slices fresh ginger
03 - 1 liter water, plus extra for pre-boiling
04 - 10 g rock sugar (or 2 teaspoons granulated sugar)
05 - 1 small cassia cinnamon stick
06 - 1 dried bay leaf
07 - 1 star anise pod
08 - 1 small piece dried tangerine peel
09 - 3 whole cloves
10 - 1 teaspoon Sichuan peppercorns
11 - 1 teaspoon white or black peppercorns
12 - 3 cloves garlic, smashed
13 - 2 scallions, cut into large pieces
14 - 3 tablespoons Shaoxing wine
15 - 3 tablespoons light soy sauce
16 - 1 tablespoon dark soy sauce

→ Assembly

17 - 6 store-bought scallion pancakes
18 - Neutral cooking oil for frying
19 - 1 medium cucumber, julienned
20 - 3 scallions, finely chopped
21 - 3 tablespoons fresh cilantro, chopped
22 - 2-3 tablespoons hoisin sauce

# Instructions:

01 - Cut beef shank into 10-13 cm pieces. Place in a medium pot with ginger slices and cover with water. Bring to a boil and cook for 30 seconds. Drain, rinse the beef thoroughly, and clean the pot. Discard the ginger slices.
02 - Return beef to the clean pot. Add rock sugar, cinnamon, bay leaf, star anise, dried tangerine peel, cloves, both types of peppercorns, garlic, scallions, Shaoxing wine, light soy sauce, and dark soy sauce. Cover with 1 liter of water, adding more if needed to submerge the beef completely.
03 - Bring to a boil, then reduce heat to a simmer. Cover and cook for 1 hour or until fork tender but still firm enough to slice. The beef shouldn't fall apart.
04 - Remove beef from the cooking liquid and allow to cool at room temperature. Once cooled, cover and refrigerate until completely chilled, at least 2 hours or overnight for easier slicing.
05 - Cook scallion pancakes in oil until crisp on both sides according to package instructions. Meanwhile, slice the chilled beef thinly against the grain. Prepare cucumber, scallions, and cilantro.
06 - Spread hoisin sauce evenly on each warm pancake. Layer with scallions, cilantro, sliced beef, and julienned cucumber. Roll each pancake tightly and slice in half crosswise.
07 - Arrange beef rolls on a serving platter and serve immediately while still warm.

01 - Chilling the beef completely before slicing is crucial for clean, thin slices.
