Preheat oven to 375°F (190°C) and coat a 9x13-inch baking dish with non-stick spray.

In a large skillet over medium heat, cook ground beef and diced onion, breaking beef into crumbles. Continue until beef is no longer pink and onions are tender.

Add minced garlic and taco seasoning to the skillet. Stir constantly until the mixture is fragrant and evenly coated, about 1 minute.

In a large bowl or directly in the skillet, mix the cooked beef mixture with frozen hashbrowns, cheddar cheese soup, and 1½ cups shredded Mexican cheese blend until blended.

Spread the mixture into the prepared baking dish in an even layer. Sprinkle the remaining ½ cup cheese evenly over the top.

Place the baking dish in the preheated oven and bake uncovered for 25–30 minutes, or until the cheese is fully melted and golden brown on top.

Allow to cool briefly, then serve with optional toppings such as sour cream, salsa, cilantro, pico de gallo, or guacamole.
