Set oven to 375 degrees Fahrenheit.

Heat canola oil in a large skillet over medium-high. Add ground beef, chili powder, smoked paprika, onion powder, garlic powder, cumin, coriander, and cayenne. Cook until beef is thoroughly browned, breaking it apart with a spoon. Season with salt and black pepper to taste.

In a large oven-safe dish, place half of the French fries. Sprinkle with half of the shredded Mexican cheese and layer with half of the seasoned ground beef.

Top with the remaining French fries, followed by the remaining shredded Mexican cheese and ground beef.

Bake in the preheated oven for 5 to 10 minutes or until the cheese is fully melted.

Remove from oven. Allow to cool for five minutes. Garnish with crumbled cotija cheese, chopped cilantro, and hot sauce if desired. Serve immediately.
