Smooth, spicy cheese sauce inspired by Taco Bell. Perfect for nachos, easy to make, rich in flavor.

# Ingredients:

→ Cheese Sauce Base

01 - 1 cup whole milk
02 - 1 cup shredded cheddar cheese
03 - 2 tablespoons unsalted butter
04 - 1 tablespoon all-purpose flour
05 - 1/2 teaspoon paprika
06 - 1/4 teaspoon garlic powder
07 - 1/4 teaspoon onion powder
08 - 1/4 teaspoon cayenne pepper (optional, for spice)
09 - Salt to taste

# Steps:

01 - Melt the butter in a medium saucepan over medium heat.
02 - Add the flour to the melted butter and whisk continuously for about 1 minute until a pale roux forms.
03 - Gradually pour in the milk while whisking constantly to avoid lumps. Continue whisking until the mixture begins to thicken.
04 - Lower the heat to medium-low. Stir in shredded cheddar cheese, paprika, garlic powder, onion powder, cayenne pepper if using, and salt. Mix until the cheese is completely melted and the sauce is smooth.
05 - Remove the pan from heat. Serve the cheese sauce immediately with nachos or desired Tex-Mex dishes.

# Notes:

01 - For a smoother texture, use freshly grated cheddar cheese instead of pre-shredded varieties.
