In a large skillet over medium-high heat, brown ground beef, breaking it apart as it cooks. Drain excess fat, return meat to skillet, add taco seasoning and 3/4 cup water. Stir to combine, bring to a boil, then reduce heat and simmer until mixture thickens.

In a separate large skillet, heat vegetable oil over medium heat. Fry each tortilla for 3–4 minutes, flipping often, until golden and crisp. Set aside on paper towels to drain.

In a microwave-safe bowl, warm the refried beans until easily spreadable, approximately 1–2 minutes on high power.

For each pizza, spread a generous layer of warmed refried beans onto a fried tortilla, followed by an even layer of seasoned ground beef. Top with a second fried tortilla, then spread about 2 tablespoons enchilada sauce over the top layer and sprinkle with Mexican cheese blend.

Place assembled pizzas onto a baking sheet and bake at 400°F for 8–10 minutes, or until cheese is fully melted and edges are crisp.

Remove from oven and top each pizza with diced tomatoes, sliced green onion, sliced olives, and a dollop of sour cream before slicing and serving.
