In a large mixing bowl, combine ground beef, soaked breadcrumbs, egg, onion, garlic, chopped mushrooms, Worcestershire sauce, Dijon mustard, salt, pepper, and parsley. Mix gently until just combined, avoiding overmixing to maintain tenderness.

Transfer meat mixture to prepared baking dish and form into a uniform loaf shape. Bake for 40-45 minutes until internal temperature reaches 160°F (71°C).

While meatloaf bakes, cook bacon in a skillet until crispy, then drain and crumble. Using the same skillet with residual bacon fat, sauté mushroom slices until tender and lightly browned.

Remove meatloaf from oven when almost done. Layer Swiss cheese slices across the top, then distribute sautéed mushrooms and crumbled bacon evenly. Return to oven for 10 minutes until cheese is completely melted and bubbly.

Allow meatloaf to rest for 5-10 minutes before slicing. Garnish with freshly chopped parsley and serve with your choice of side dishes.
