Sweet Raspberry Chocolate Quesadilla (Print Version)

Tortillas stuffed with raspberry, chocolate, and cookie chunks, finished with a golden cinnamon sugar coating.

# Ingredients:

→ Filling

01 - 4 ounces cream cheese, softened
02 - 2 tablespoons light brown sugar
03 - 1/2 teaspoon ground cinnamon
04 - 1/2 cup raspberry jam
05 - 5 chocolate chip cookies, coarsely chopped

→ Wrap

06 - 4 flour tortillas, 8-inch diameter

→ Topping

07 - Butter or cooking spray
08 - 2 tablespoons cinnamon sugar
09 - Fresh raspberries, for serving (optional)

# Steps:

01 - In a small mixing bowl, combine softened cream cheese, light brown sugar, and ground cinnamon. Blend until the mixture is smooth and thoroughly incorporated.
02 - Lay flour tortillas flat. Evenly spread the cream cheese mixture over one half of each tortilla. Top the spread with raspberry jam and sprinkle the chopped chocolate chip cookies evenly over the jam. Fold each tortilla in half to enclose the filling.
03 - Lightly brush or spray both sides of each filled tortilla with butter or cooking spray. Evenly sprinkle cinnamon sugar over the exterior of each quesadilla.
04 - Preheat a skillet over medium-high heat. Place the prepared quesadillas in the skillet, cooking each side for 1 to 2 minutes until golden brown and crisp.
05 - Slice the warm quesadillas into wedges and serve with fresh raspberries if desired.
