# Instructions:

01 - Peel and grate the sweet potatoes using a food processor or box grater. Rinse the shredded potatoes under cold water until the water runs clear to remove excess starch.
02 - Squeeze the water and moisture from the shredded potatoes using a cheesecloth bag or pat dry thoroughly with paper towels.
03 - In a separate bowl, whisk the egg with the chopped green onions.
04 - Add the egg mixture to the shredded potatoes. Mix in salt, pepper, spices, flour, cheese, and bacon until well combined.
05 - In a large skillet, heat a thin layer of oil over medium heat.
06 - Using a spoon, drop rounds of the sweet potato mixture into the skillet and press into pancake shapes with a spatula. Cook for 3-4 minutes per side until golden brown on the outside and cooked through inside.
07 - Serve with a dollop of sour cream on top or your favorite dipping sauce such as homemade Chipotle sauce.
