Sweet Chilli Halloumi Wrap (Print Version)

Crispy halloumi, sweet chilli, fresh veggies and tangy yogurt rolled in a soft wrap for vibrant, quick flavour.

# Ingredients:

01 - 8 ounces low-fat halloumi cheese, thinly sliced
02 - 1 tablespoon sweet chili sauce
03 - 1 tablespoon rapeseed oil or olive oil
04 - 1 medium cucumber (one-third grated, two-thirds thinly sliced)
05 - 3/4 cup Greek yogurt
06 - 2 heads baby gem lettuce
07 - 1 medium carrot, grated or cut into matchsticks
08 - 1 clove garlic, minced
09 - Juice of 1/2 lime
10 - 1/2 bunch fresh cilantro
11 - 4 large flour tortillas
12 - Salt and black pepper, to taste

14 - Additional sweet chili sauce

# Steps:

01 - Coat the sliced halloumi evenly with sweet chili sauce and sprinkle with chili flakes if using. Allow to marinate for at least 15 minutes, or refrigerate up to 24 hours for enhanced flavor.
02 - Heat the oil in a non-stick skillet over medium heat. Fry halloumi slices for about 2 minutes per side, adding minced garlic halfway through. Cook until golden brown and aromatic.
03 - In a bowl, combine grated cucumber, Greek yogurt, lime juice, and a pinch of salt. Mix until well incorporated.
04 - Lay out each flour tortilla and spread a generous layer of tzatziki. Add baby gem lettuce leaves, sliced cucumber, grated carrot, and fried halloumi. Top with fresh cilantro and, if desired, an extra drizzle of sweet chili sauce or more tzatziki. Season with black pepper as needed.

01 - Marinating halloumi ahead of time intensifies the sweet chili flavor and softens the cheese’s texture.
02 - If preferred, tortillas can be briefly warmed in a dry skillet before assembly to enhance pliability.
