# Ingredients:

→ Dough and Base

01 - 2 sheets frozen puff pastry, thawed

→ Egg Mixture

02 - 6 large eggs

→ Vegetables

03 - 1/2 medium red onion, thinly sliced
04 - 6 to 8 pieces semi-dried tomato
05 - 4 to 6 white mushrooms, sliced

→ Meats

06 - 2 to 3 slices smoked ham
07 - 4 to 6 slices salami

→ Herbs

08 - 2 to 3 sprigs fresh basil, oregano or thyme

→ Cheese

09 - 1 1/2 cups grated mozzarella cheese

→ For greasing

10 - unsalted butter, for greasing the dish

# Steps:

01 - Preheat oven to 350°F (180°C).
02 - Grease a pie dish or pie tin thoroughly with unsalted butter.
03 - Press the puff pastry sheets firmly into the dish, ensuring all seams are sealed to prevent leakage.
04 - Prick the base of the pastry a few times with a fork to prevent bubbling. Sprinkle half of the grated mozzarella cheese evenly over the pastry base.
05 - Lightly beat the eggs in a small bowl with a fork. Pour gently over the cheese-lined pastry base.
06 - Evenly distribute the sliced red onion, semi-dried tomato pieces, sliced mushrooms, ham, and salami over the egg mixture. Reserve the fresh herbs.
07 - Sprinkle the remaining mozzarella cheese over the top of the filling mixture.
08 - Bake in the center of the oven for 15 to 25 minutes, or until the pastry is golden, the eggs are set, and the top is well-browned.
09 - Allow the pie to cool briefly. Garnish with fresh basil, oregano, or thyme. Slice and serve hot, or allow to cool completely for use in lunchboxes or picnics.

# Notes:

01 - Ensure seams in the pastry are sealed to prevent leaks. For best results, allow the pie to rest for 5 minutes before slicing to maintain structure.
