Grease a pie dish or pie tin thoroughly with unsalted butter.

Press the puff pastry sheets firmly into the dish, ensuring all seams are sealed to prevent leakage.

Prick the base of the pastry a few times with a fork to prevent bubbling. Sprinkle half of the grated mozzarella cheese evenly over the pastry base.

Lightly beat the eggs in a small bowl with a fork. Pour gently over the cheese-lined pastry base.

Evenly distribute the sliced red onion, semi-dried tomato pieces, sliced mushrooms, ham, and salami over the egg mixture. Reserve the fresh herbs.

Sprinkle the remaining mozzarella cheese over the top of the filling mixture.

Bake in the center of the oven for 15 to 25 minutes, or until the pastry is golden, the eggs are set, and the top is well-browned.

Allow the pie to cool briefly. Garnish with fresh basil, oregano, or thyme. Slice and serve hot, or allow to cool completely for use in lunchboxes or picnics.
