01 - 1 1/2 pounds ground beef, 80/20 blend
02 - 6 flour tortillas, taco size
03 - Salt, to taste
04 - Black pepper, to taste

→ Creamy Jalapeño Sauce

05 - 3/4 cup cilantro leaves, stems removed
06 - 1/2 cup pickled jalapeños
07 - 2 tablespoons pickled jalapeño juice
08 - 3/4 cup mayonnaise
09 - 3/4 cup sour cream
10 - 1 heaping tablespoon dry ranch seasoning
11 - 1/2 teaspoon garlic powder
12 - 1/2 teaspoon salt
13 - 1 tablespoon fresh lime juice
14 - Buttermilk, as needed for thinning

15 - 5 to 6 ears corn, kernels removed
16 - 2 tablespoons olive oil
17 - 1/3 cup mayonnaise
18 - 1 garlic clove, minced
19 - Zest of 1 lime
20 - Juice of 1 lime
21 - 1/3 cup scallions, thinly sliced
22 - 1/3 cup cotija cheese, grated
23 - 1/4 cup cilantro, finely chopped
24 - 1 jalapeño, finely diced
25 - 1/2 to 1 teaspoon chili powder
26 - 1/2 to 1 teaspoon Tajin seasoning
27 - 1/4 teaspoon salt

# Steps:

01 - Heat olive oil in a large skillet over medium-high heat. Add corn kernels and cook, stirring frequently, until lightly charred. Remove from heat and allow to cool.
02 - In a mixing bowl, whisk together mayonnaise, lime juice, lime zest, minced garlic, chili powder, Tajin, and salt. Fold in cooled corn, cilantro, scallions, diced jalapeño, and cotija cheese. Stir until evenly combined and set aside.
03 - In a blender or food processor, purée cilantro leaves, pickled jalapeños, and jalapeño juice until finely blended.
04 - In a bowl, combine mayonnaise, sour cream, dry ranch seasoning, garlic powder, and salt. Stir in the cilantro-jalapeño purée and fresh lime juice. Adjust consistency with buttermilk if desired.
05 - Divide ground beef into 6 equal portions. Press each portion evenly onto a tortilla, spreading to the edges. Season with salt and black pepper.
06 - Heat a griddle or large skillet over high heat. Place tortillas beef-side down and firmly press the meat into the pan. Cook for 2 to 3 minutes until browned, then flip and cook tortilla side for an additional 1 to 2 minutes until beef is cooked through.
07 - Top each burger taco with a generous scoop of street corn mixture and drizzle with creamy jalapeño sauce. Serve immediately while hot.
