Remove stems from strawberries and freeze if not already frozen.

Add strawberries, sugar, lemon juice or zest, and salt to a high-speed blender. Process until completely smooth and a sorbet consistency forms.

For regular blenders, allow strawberries to thaw slightly for easier blending, then purée until smooth.

Transfer puréed mixture to an ice cream machine if an ultra-smooth texture is desired. Churn according to manufacturer’s instructions, then serve immediately or freeze for a firmer sorbet.
