Heat your oven to 400°F (200°C/Gas 6) and line a baking tray with parchment paper.

Take the puff pastry from the fridge and let it rest a few minutes before unrolling to prevent breaking.

Cut the pastry into equal squares and fold each diagonally to make triangles. Place them on your lined tray with space between for expansion.

Mix an egg with a tablespoon of water in a small bowl and brush this over the pastry triangles.

Pop the tray in your preheated oven and bake for about 20 minutes until golden and puffed up.

While they bake, whip the cream with sugar until it forms stiff peaks. Put the whipped cream in a piping bag with a nozzle and set aside.

Remove stems from the strawberries and slice them into thin pieces.

Once the pastries are cooled, slice each one open, pipe in plenty of whipped cream, add strawberry slices on top, and gently close.

Dust your finished pastries with icing sugar and serve these beautiful treats at your special occasion.
