02 - 4 ounces cream cheese, softened
03 - 2 tablespoons powdered sugar, plus additional for dusting

05 - 1 cup fresh strawberries, diced, reserve extra for garnish

06 - 2 large eggs
07 - 1/4 cup whole milk
08 - 2 tablespoons granulated sugar
09 - 1 teaspoon ground cinnamon

10 - 2 tablespoons unsalted butter

# Steps:

01 - In a mixing bowl, blend softened cream cheese with powdered sugar and vanilla extract until fully smooth.
02 - Gently fold in diced strawberries to the cream cheese mixture, setting aside a small portion of strawberries for garnish if preferred.
03 - Remove crusts from each bread slice and flatten each slice evenly with a rolling pin.
04 - Evenly spread approximately 1 tablespoon of strawberry cream cheese mixture across each flattened bread slice.
05 - Roll each prepared bread slice tightly into a log, firmly pressing along the seam to seal.
06 - In a shallow dish, vigorously whisk together eggs and milk until homogenous.
07 - In a separate shallow bowl, combine granulated sugar and ground cinnamon evenly.
08 - Dip each roll-up first into the egg mixture, allowing excess to drip off, then gently roll in the cinnamon-sugar mixture to achieve an even coating.
09 - Melt butter in a nonstick skillet over medium heat. Sear the prepared roll-ups, rotating as needed, for 2 to 3 minutes per side until golden brown and crisp on all surfaces.
10 - Arrange warm roll-ups on a serving platter. Lightly dust with additional powdered sugar and top with reserved fresh strawberries before serving.
