Homemade Spinach Feta Wrap (Print Version)

01 - 1 10-inch tortilla (gluten-free if needed)
02 - 2 large egg whites
03 - 1/2 cup fresh spinach (or thawed frozen spinach)
04 - 4 sun-dried tomatoes, chopped
05 - 2 tablespoons crumbled feta cheese
06 - 1/4 teaspoon salt
07 - 1/8 teaspoon pepper

# Instructions:

01 - Heat a non-stick skillet with a little oil or cooking spray over medium heat. Once hot, pour in your egg whites and season with salt and pepper. Fold them over gently and cook until set on both sides. Remove from the pan and set aside.
02 - Add your spinach to the same pan and cover for 1-2 minutes until beautifully wilted.
03 - Lay your tortilla flat and place the cooked egg whites in the center. Top with the wilted spinach, chopped sun-dried tomatoes, and sprinkle with crumbled feta cheese. Fold the wrap up snugly.
04 - Return the assembled wrap to the skillet and lightly brown on all sides, or for extra crispiness, toast it in a panini press until golden and warmed through.
