Spicy Corn Slaw Mix (Print Version)

# Ingredients:

→ Vegetables

01 - 1 bag (14 oz) cole slaw mix
02 - 2 cups corn kernels
03 - 1/4 cup jalapeño, finely minced
04 - 1/2 cup fresh cilantro, chopped
05 - 3 green onions, sliced

→ Dressing

06 - 1/2 cup mayonnaise
07 - Juice of 2 limes
08 - 2 tablespoons granulated sugar
09 - 1 teaspoon garlic powder
10 - Salt, to taste
11 - Black pepper, to taste

# Steps:

01 - In a large mixing bowl, add cole slaw mix, corn, jalapeño, cilantro, and green onions. Gently toss to distribute ingredients evenly.
02 - In a separate smaller bowl, whisk together mayonnaise, lime juice, sugar, garlic powder, salt, and black pepper until smooth and fully combined.
03 - Pour the prepared dressing over the vegetable mixture. Toss gently with a spatula or large spoon until all ingredients are evenly coated.
04 - Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

# Notes:

01 - For milder heat, reduce or omit the jalapeño. For extra crunch, use fresh corn kernels when in season.
