Spicy Cajun Chicken Linguine (Print Version)

# Ingredients:

→ Cajun Chicken

01 - 4 boneless, skinless chicken breasts (approximately 170 g each)
02 - 2 tablespoons Cajun seasoning
03 - 1 tablespoon olive oil
04 - 1 tablespoon unsalted butter
05 - 120 ml chicken stock
06 - 60 ml heavy cream
07 - 1 tablespoon chopped fresh parsley, for garnish

→ Creamy Garlic Parmesan Linguine

08 - 450 g linguine pasta
09 - 4 tablespoons unsalted butter
10 - 2 garlic cloves, minced
11 - 240 ml heavy cream
12 - 60 g grated Parmesan cheese, plus more for serving
13 - 60 ml reserved pasta cooking water
14 - 0.25 teaspoon fine salt
15 - 0.25 teaspoon freshly ground black pepper
16 - 0.25 cup chopped fresh basil, for garnish

# Instructions:

01 - Cook linguine in a large pot of salted boiling water until al dente according to package directions. Reserve 60 ml of cooking water. Drain pasta and set aside.
02 - Pat chicken breasts dry with paper towels. Evenly coat both sides with Cajun seasoning.
03 - Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken breasts and cook for 5–7 minutes per side until golden brown and internal temperature reaches 74°C. Remove from skillet and let rest.
04 - Reduce heat to medium. Add chicken stock and 60 ml heavy cream to the same skillet, scraping the browned bits from the bottom. Simmer for 3–4 minutes until sauce slightly thickens. Remove from heat.
05 - In a separate sauté pan over medium heat, melt 4 tablespoons butter. Add minced garlic and cook for 1 minute until fragrant. Stir in 240 ml heavy cream and bring to a gentle simmer. Gradually add Parmesan cheese, whisking until smooth. Season with salt and pepper.
06 - Toss linguine in the Parmesan sauce until well coated. If needed, incorporate reserved pasta water, a little at a time, to achieve desired sauce consistency.
07 - Slice rested chicken breasts. Arrange over the sauced linguine. Spoon Cajun cream sauce from skillet over the chicken if desired.
08 - Finish with chopped parsley, fresh basil, and additional grated Parmesan. Serve immediately.
