Southwest Chicken Wrap (Print Version)

Chicken, veggies, and rice blend in a flavorful wrap with chipotle, lime, black beans, and cotija cheese.

# Ingredients:

→ Protein

01 - 12 ounces boneless, skinless chicken breasts, diced

→ Marinade

02 - 1/4 cup lime juice
03 - 1/2 teaspoon chili powder
04 - 1/2 teaspoon onion powder
05 - 1 teaspoon garlic powder
06 - 1/2 teaspoon smoked paprika
07 - 1/4 teaspoon salt
08 - 3 tablespoons olive oil
09 - 1 tablespoon chipotle pepper in adobo, chopped

→ Wrap Components

10 - 4 large flour tortillas
11 - 1 cup uncooked long grain rice
12 - 1 small red bell pepper, diced
13 - 1 jalapeño, diced
14 - 1/2 red onion, sliced
15 - 3 garlic cloves, minced
16 - 1 teaspoon olive oil
17 - 3/4 cup corn kernels
18 - 1 cup canned black beans, drained and rinsed
19 - 1/4 cup crumbled cotija cheese

→ Chipotle Sour Cream Sauce

20 - 1/3 cup sour cream
21 - 1 1/2 tablespoons honey
22 - 1/2 to 1 tablespoon chipotle peppers in adobo, chopped
23 - 1 tablespoon lime juice
24 - 3 tablespoons fresh cilantro, chopped
25 - 1 to 2 tablespoons water, as needed
26 - 1/4 teaspoon salt

# Steps:

01 - Combine diced chicken, lime juice, chili powder, onion powder, garlic powder, smoked paprika, salt, olive oil, and chipotle pepper in a bowl. Mix thoroughly and refrigerate for at least 15 minutes.
02 - Cook rice according to package directions. Fluff rice with a fork and set aside.
03 - Heat a large skillet over medium heat. Add marinated chicken and sauté until it is fully cooked and lightly browned, about 12 to 15 minutes. Transfer chicken to a plate and keep warm.
04 - Add olive oil to the same skillet. Sauté red bell pepper, jalapeño, and red onion over medium heat until tender, about 4 to 5 minutes. Add garlic and cook for an additional 1 minute.
05 - Return cooked chicken to skillet with vegetables. Stir well and cook until warmed through, 2 to 3 minutes.
06 - Whisk together sour cream, honey, chipotle peppers in adobo, lime juice, cilantro, water, and salt in a small bowl until smooth.
07 - Lay tortillas flat. Layer cooked rice, chicken and vegetable mixture, black beans, corn, cotija cheese, and chipotle sour cream sauce. Fold in sides and roll tightly into a wrap.
08 - Slice wraps in half and serve immediately while warm.

01 - For added flavor, lightly toast tortillas before assembling wraps.
