Smothered Green Chile Chicken Burritos (Print Version)

Crispy chicken burritos topped with homemade green chile sauce and melted cheese for a satisfying Mexican-inspired meal.

# Ingredients:

→ Chicken filling

01 - 3 cups cooked chicken, chopped or shredded
02 - 1 1/2 cups salsa, your favorite kind
03 - 1 1/2 teaspoons ground cumin
04 - 1/2 teaspoon dried oregano, crushed
05 - 1 1/4 cups shredded cheddar cheese
06 - 2 green onions, chopped
07 - 6 large flour tortillas
08 - Olive oil, for brushing on burritos

→ Green Chile Sauce

09 - 3 tablespoons butter
10 - 3 tablespoons all-purpose flour
11 - 1 clove garlic, minced
12 - 2 cups low-sodium chicken broth
13 - 1/2 teaspoon ground cumin
14 - 1/2 teaspoon dried oregano, crushed
15 - Salt and freshly ground black pepper, to taste
16 - 4 ounces diced green chilies, mild
17 - 1/3 cup shredded cheddar cheese
18 - 1/2 cup sour cream

# Instructions:

01 - Preheat oven to 400°F. Line a baking sheet with foil or parchment paper.
02 - Combine chicken, salsa, cumin, oregano, cheese and green onions in a mixing bowl.
03 - Place approximately 1/2 cup of the chicken mixture in the center of each tortilla. Fold the sides in and roll up tightly to form burritos. Place seam-side down on the prepared baking sheet. Brush each burrito lightly with olive oil.
04 - Bake at 400°F for 20-25 minutes until golden brown and crispy.
05 - While burritos are baking, melt butter in a medium saucepan over medium heat. Once bubbling, whisk in flour and cook, stirring constantly for about 3 minutes to create a roux. Add minced garlic and stir for 30 seconds.
06 - Gradually whisk in chicken broth. Add cumin, oregano, salt and pepper. Cook, stirring continuously, until thickened, about 2-3 minutes. Remove from heat and stir in green chilies, cheese and sour cream. Adjust seasonings to taste.
07 - Remove burritos from oven and switch oven to HIGH broil. Ladle sauce over each burrito and sprinkle with additional cheddar cheese. Broil for 2-3 minutes, or until cheese is melted and bubbly.
08 - Serve hot with Mexican rice as an accompaniment.

# Notes:

01 - These burritos can be assembled ahead of time and refrigerated before baking.
02 - For a spicier version, use hot green chilies instead of mild.
