Remove refrigerated pie crusts from packaging and allow to come to room temperature. Roll out and use a 3-inch cookie cutter to cut as many circles as possible, placing cuts close together to maximize yield.

In a medium bowl, thoroughly mix chopped chocolate, miniature marshmallows, and half of the graham cracker crumbs until evenly combined.

Place 1 tablespoon of the chocolate-marshmallow mixture onto the center of half the dough circles. Lightly moisten the dough edges with water, top each with a second dough circle, and press gently to seal. Crimp edges with a fork for a decorative, secure seal.

Brush the tops of sealed mini pies with melted salted butter. Sprinkle remaining graham cracker crumbs evenly over each pie.

Preheat air fryer to 350°F for 5 minutes. Lightly coat the basket with nonstick spray. Arrange 2-4 pies in the basket without touching. Air fry for approximately 10 minutes until crusts are golden brown and filling is melted. Transfer to a wire rack to cool. Repeat with remaining pies.

Arrange cooled hand pies on a serving platter and offer chocolate syrup and marshmallow cream for dipping. Serve slightly warm for best results.
